Cooking with the Cow

Although cooking is one of my greatest passions, I have never seen myself as a chef.

I'm more like an inventor I suppose; although probably more the crazy white haired-type, relegated to the garden shed as opposed to anything more credible.

Heston Blumenthal I am not. I don’t attempt chemical reactions or molecular gastronomy. Snail porridge or parsnip cereal does nothing for me.

My gift for food, so I'm told, is making the seemingly unhealthy, healthy. And after 3 years of tinkering, I actually think I'm pretty good at it.

With an arsenal of herbs, spices and low cal cooking sprays, I like nothing better than locking myself away in the deepest depths of my kitchen, and rattling pots, pans and cupboard doors, until triumphantly yelling eureka.

My mantra is simple. To eat as well as I can, as often as I can, without looking like I do. This collection of recipes are just a small handful of recipes which have graduated from my laboratory as fulfilling just that.




After learning that this supposed 'allie' of the weight watcher, was in fact more foe than friend, I set about the task of creating a much less sinful, yet equally as indulgent alternative.

The Skosmopolitan, contains at least half the calories of your standard Cosmo, and if you ask me... tastes just as good.

Bored of bland and uninspiring breakfast routines? Why not add some indulgence to your morning with my recipe for Sugar Snap Porridge.

This addition to the standard accoutrement of jam and honey, is not only delicious and nutritious, but also an ample pacifier for even the sweetest of tooth's.

Serve as an indulgent topping to plain old oats and water, or as the Pièce de résistance to just about any porridge accompaniment.

Just watch out for Goldilocks...
and the bears for that matter!

Chilli, Cumin and Coriander Paneer
(with 1% milk)

Looking for a lighter yet equally delicious take on Indian Paneer?
Well look no further (I hope!)

Grill it, fry-it, stick it on a kebab, or chuck it in a curry, if you haven't already discovered the wonder that is Paneer, you are missing out my friend. With less than 100 calories per serving, a bucket load of calcium, and the added accolade of being able to exclaim 'Look at me... I made my own cheese!!!' this recipe is definitely worth a gander.

Give it a go - involve the kids... it's actually pretty good fun!

Who doesn't like a good ole Persian stew, eh?
What, you've never tried one? Where have you been?

This recipe for my take on the wonderful Kashk-e Bademjan (which is traditionally served as more of a dip in Persian Cuisine) is both hearty and healthy.

I happen to think it tastes pretty damn fine too.
